Cookies and...

What do you offer on your first menu for dessert options when you're about to open your first restaurant ever? Jo and I didn't have a clue back in 2010. We looked and looked until I asked Jo to make that spicy chocolate ginger cookie our friend Colleen from Charlotte, NC made for us one time.
I met Colleen and her husband Bart one night during a confirmation orientation. Bart was there as his best friend's sponsor and Colleen was there to support her husband's best friend. I gotta note that Colleen was my confirmation sponsor, a role she accepted when I asked her after finding out I needed one.
So after I begged Jo to use her baking skills to create two dessert options she began to experiment based on the little bit of memory she had from that delicious baked confection. She tried and tried, I tasted and tasted and possibly gained a few pounds. I was happy with every cookie she baked but she wasn't pleased until one day, just a week before we opened she nailed it and approved the recipe. We called it La Mestiza. It has been a little challenging to get our hands on good and enough avocados
in the last few weeks. This has resulted in us not being able to offer Chef Mel's Spicy Chocolate Avocado Mousse so Jo and were chatting last night over what dessert to offer. To my surprise this morning, Jo was ready to bring the Mestiza back and it made me feel very happy! For those of you who like classics come over to Cueva Bar and make sure to save some room for dessert after you've sampled through our tapas.
